Cafeología is a registered brand founded by Cafeólogo, Jesús Salazar, in 2010. Since then, has become the symbol of a revolutionary Coffee Knowledge System that attracts the attention of coffee people, from researchers to professionals and consumers.
During this workshop, the founder and philosopher of Cafeología will share the principles, foundations, epistemic basis, methodology, shape and content of this holistic Coffee Knowledge System.
This is the very first time Cafeología will be explained and open to dialogue with the coffee industry as a Coffee Knowledge System.

2:00pm – 3:00pm – Jean Etchats (France/Colombia)
Jean Etchats is the Quality Manager and Organic Analysis Project Manager for Belco. His workshop aims to help understand water activity parameters, the relation with wet mills, and the importance and link with quality and conservation.
He will be presenting studies and answering questions about why this parameter is increasingly used in the coffee industry and what it means.

Dale is the 2017 World Barista Champion and a founding member of the Barista Guild of Europe. He also leads ‘Product and Business Development’ at OCRi and collaborates on diverse coffee projects for brands and individuals across the world through playset.coffee.

The workshops and mini-lectures will be held in a room which can accommodate only 100 people.
Do I have to pre-register for the workshops and cuppings?
Yes, please click on the “Register” button on the workshop or cupping session you would like to attend and complete the form.
Each event has a limited number of seats depending on the capacity of the room and the activities participants will be involved in.
DO I HAVE TO BRING MY OWN MATERIALS FOR THE INTERACTIVE WORKSHOPS?
All materials and resources needed for the interactive workshops will be provided at the event. The organizers will contact you via email if you will be required to bring your own materials.
